I would like to find out if Engineering materials can be printed on the Up mini 2 or the Up Plus 2.
Or are these machines just more for educational and learning aids?

Yes, you can print ABS, PC, Nylon on UP mini 2 or UP UP pLus 2
You need to use the perforated print surface and turn on raft in order to get good adhesion to platform.

Yes, I have printed a lot of all 3 of those materials. Also, you can print without raft if you put kapton tape on the perforated platform and use glue stick.

Are there any special settings for printing these materials that I would need to add or are all of the print settings stored in the UP Studio slicer?

If the print temperature of the material match the default settings, usually should be fine.
Otherwise you need setup a new profile for the material.
